^Easy HDR if you use a program like Photomatix pro or Hydra.

Like anshul said, it takes 3 pics in succession with 3 eV or exposure levels (eg -1,0,+1 eV). You can choose what has the best exposure or its widely used in getting HDR photos wherein all 3 images are merged in the program and it outputs the HDR image. Basically you get an image with the full color intensity range

How is LR3 compared to Aperture? I tried LR when it came out but didn't like it. The RAW workflow was way behind Aperture and only plus point it had was PS integration. And Aperture seems to be slow in updating camera database, they just added my Kiss X4 few weeks back.
This is a classic Nikon or Canon question CC. I would suggest you try out both. Mac user atleast has the benefit of having A3. A3 has great photo library management while LR3 has great photo editing tools. Aperture meshes with the OSX ecosystem very well. But performance and speedwise LR3 leads A3 definitely. Also try Hydra, very good HDR tool.

Yea. See both r equally good and no camera is going to give u better results. Heck u could buy a 60D and you would get same results.
get a feel of the 3100 before buying. See if your palm index finger and thumb sit well on the body of the cam. If u like the feel, just go for the nikon. Seriously nothing to think.

The 1100D has Auto exposure bracketing. One thing that is very good for a product in its price range. Other wise I dont see how the D3100 is better. I'm assumin u r not comparing resolutions here
