Somebody
^^ I don't think you'll need to upgrade to the new firmware. Just backup your old harddrive onto an external hdd and just replace the hdd with the new one and restore. Hitachi should be fine. And changing the PS3's hdd is a very easy process

Somebody
^^ I remember someone making a thread with a full length tutorial for how to change a hdd long back. I'm not sure I'll be able to find it with IVG's search though @gulabi.... there should be a few videos on youtube showing the process. http://www.youtube.com/watch?v=5sRkj89axOU

Jigsaw
when i swapped my 80 gigger with a 320 seagate.. the ps3 booted into a error. Had to download the latest firmware onto my ipod and connect it to the ps3 via usb and then install the firmware... later i read somewhere the ps3 stores the firmware partially onto the hdd hence swapping is not that straightforward. mohit... just keep the latest fw ready on a usb stick... just in case. baaki it is really idiotproof !!
