parsley spice.

and thanks for rest. will search around if sumac can be replicated.

no spinning equipment so got to make do with alternatives. any suggestions ?

 

First time I've ever heard of parsley spice.. Maybe dry parsley or something..

 

No alternative to the spit.. Maybe slow roast in an oven that's all.. Won't be as good as on the actual equipment though since the fat and juices will drip out of the meat

no. have an electronic tandoor though but it wont give the circular motion.

 

have wanted to get a bbq grill but have space constraints at my regular residing place (typical delhi apartment) to use it effectively and while dad gets a big a*s sprawling bunglow (transferable job) that warrants a manly bbq grill, he isnt much into food prepration so it is bound to get negelect if kept there, where i am as of now.

Get a small portable one.. Even I live in a typical Mumbai flat but a little space in your balcony and you are set!

oh and btw, parsley spice is basically dried parsley.. so you can use the fresh parsley leaves too in case dried ones aren't available.. but won't get it at a local sabjiwala.. maybe some deparment store

you did not explain anything.. you just mentioned cocks and sausages (though I wonder if you meant chicken and chicken sausage as in food). but you did not make it clear if you meant clicks or dicks.

For shawarma just cut up small pieces of boneless chicken, marinate them for an hour. Now heat up a flat pan, glaze with butter. Add the chicken pieces, cover with a lid leaving a bit open. Cook on low flame for 15 mins. Have a looksie 5 minutes in and shake up the pieces to ensure even cooking.

 

The chicken will be cooked well, and tender. Use these pieces in shawarma.

Marinating for long helps. And if you keep it in the fridge, then it usually helps to keep it outside and let it come down to room temperature naturally, rather than trying to cook while it is cold.
