megzworld Posted May 21, 2011 Report Share Posted May 21, 2011 Spinach and paneer pastries: Dead easy to make: Fry chopped garlic (3 cloves) and onions (2 large) (add turmeric, sambar powder - 1tsp, rasam powder - 1/2 tsp and salt to taste at this stage) Add chopped spinach(approx 1/2 kilo) - cook until about 80% done Add chopped paneer (as much or as little as you like really) Add 1/2 tsp garam masala Let it cook through until the curry is a dry curry. Preheat oven to 180 degrees. Line baking tray with baking paper and grease the top of the baking paper (else the pastries will stick to the paper) Cut frozen puff pastry sheets (I used two and a half sheets) (take it out of the freezer and leave for about 10 mins, or else the sheets will snap) into quarters. Spoon mixture to the left of each quarter (leaving enough room on the edges to press the pastry closed), fold quarter over, and press closed (you can use your fingers or a fork). Make a glaze (1 egg + 1 tbsp water) and brush over the pastries. Take a fork and prick holes (say at 1cm intervals) along each parcel. Place in oven for 25-30 mins (until golden brown).
