Here's a really simple recipe for it: Chocolate fudge sauce I think you can skip the vanilla essence if you want to (and check for sweetness before adding in the brown sugar - if the chocolate/cream mixture feels pretty sweet already, skip it entirely or halve the amount). If you want to make fudge sauce that will set hard, then use couverture chocolate (it's fancy cooking chocolate with extra cocoa solids and therefore makes for chocolate sauce that can be used to coat things, so the sauce will set hard over the icecream if you use it).
