If you're not used to the Souls games mechanic it can be daunting. You'll need to be patient, and as Knight, use your shields. Also, the enemy attacks are well telegraphed, so keep an eye out for the heavy ones which will break your guard and stamina. For the boss - do a bit of farming of the firebombs and pine resin, he's very weak to fire. Until you beat the boss, you can't level up either, so just be patient and get the Phalanx killed.
